Tocino is an all-time favourite in the Philippines. The perfect combination of savoury-sweet, it is commonly served over a bowl of garlic fried rice and a sunny-side-up egg. Break the yolk to add a creamy texture to the meal, and you’ll have the most satisfying breakfast ever. Although it’s generally regarded as a breakfast meal, you can always prepare this tocino recipe throughout the day whenever you’re hungry.

Ingredients

  • 910g of pork butt, sliced into ¼-inch pieces
  • 200g of sugar
  • 1 tbsp of salt
  • 1 tbsp of garlic powder
  • ¼ tsp of black pepper
  • 2 drops of red food colouring
  • 235ml of water
  • 2 tbsp of canola oil

  • 1 airtight container
  • 1 pan

Directions

  • Combine the pork, sugar, salt, garlic powder, black pepper, and red food colouring in a bowl.
  • Massage the marinade into the pork and coat evenly.
  • Transfer the marinated pork into an airtight container and refrigerate it for 8 hours to cure.
  • In a pan over medium heat, add the marinated pork and the marinade.
  • Pour in water and bring it to a boil.
  • Turn the heat down to low, cover the pan, and simmer until the meat is tender.
  • Add oil and stir to mix until the meat caramelises.
  • Serve immediately!
