Tinola is a Filipino soup popular during the chilly weather. Locals enjoy it with some fish sauce and a bowl of steaming rice. This tinola recipe is the ultimate comfort food you can make on a rainy day. Tinola includes nutritious ingredients like chayote squash or green papaya, chicken, and spinach. Therefore, not only is it delicious, it’s healthy too.

Ingredients

  • 15ml of cooking oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 4cm long ginger, peeled and thinly sliced
  • 15ml of fish sauce
  • 1.3kg of chicken thighs, rinsed and dried
  • 2 cans of chicken broth
  • 1 chayote squash, peeled and cut into small pieces
  • Salt to taste
  • Pepper to taste
  • 1 boy choy, chopped
  • 230g of spinach

Directions

  • Pour the oil into the pot and heat it over medium heat. Add the chopped onion and minced garlic and stir fry until fragrant.
  • Next, add the sliced ginger, fish sauce, and chicken thighs. Let it cook for 5 minutes.
  • Then, pour the chicken broth into the pot and let it cook for 5 minutes.
  • Add the chayote squash and let it simmer until the chicken is cooked, or for around 10 minutes.
  • Season with salt and pepper to taste.
  • Lastly, add the boy choy and spinach for 1 – 2 minutes.

Alternative Ingredients for Your Tinola

To make a traditional tinola, add wedges of unripe papaya, otherwise known as green papaya, and malunggay leaves. These ingredients can be challenging to find overseas. That’s why this tinola recipe asks for chayote squash and spinach instead. Moreover, tinola is traditionally made with rice water – the water used to wash rice. It can be used to substitute the chicken broth, to remove any gamey flavour from the chicken. Also, feel free to remove the chicken skin to reduce fat content. We recommend using bone-in chicken, but you can use boneless chicken like breast as well.
