Tahong is a Filipino dish—it’s affordable, easy, and you can quickly whip this up in under 30 minutes. Muscles cooked in a refreshing ginger-based broth accompanied by vegetables of your choice, this dish is usually served with plain steamed rice. Although it’s simple, this tahong recipe perfectly captures all its powerful flavours in each bite.

Ingredients

  • 1 tbsp of cooking oil
  • 6 cloves of garlic, minced
  • 1 ginger, julienned
  • 1 onion, chopped
  • 950ml of water
  • 3 tbsp of fish sauce
  • 1kg of mussels, cleaned
  • 1 bunch fresh spinach, stems trimmed
  • ½ tsp of salt
  • ½ tsp of ground pepper

Directions

  • In a pot over medium heat, add oil.
  • Add garlic, ginger, and onions and sauté until fragrant.
  • Add water and fish sauce and bring to a boil.
  • Toss in the mussels and cook over medium heat.
  • Using the sieve, remove any scum or foam floating on top, then cover with the lid. Cook for 5 minutes.
  • Add in the fresh spinach and season with pepper and salt. Simmer for another 2 minutes.
  • Ladle into a bowl and serve!
