Fresh scallops pan-seared with a beautiful crust on the outside and cooked in a creamy garlic sauce with a tinge of lemon; this dish is exquisite and perfectly hits all the flavour notes. Ingredients

  • 2 tbsp of olive oil
  • 600g of scallops
  • ¼ tsp of salt
  • ¼ tsp of black pepper
  • 2 tbsp of unsalted butter
  • 5 cloves of garlic, minced
  • 240ml of heavy cream
  • 1 tbsp of lemon juice
  • 50g of chopped parsley

Directions

  • In a pan over medium-high heat, add olive oil. Heat until sizzling.
  • Add scallops (in batches) and season with salt and pepper. Sear on each side for 3 minutes until a golden crust forms. Remove from the pan and set aside.
  • In the same pan, melt butter and scrape any browned bits leftover on the bottom of the pan.
  • Add garlic and sauté until fragrant.
  • Add heavy cream and bring it to a simmer until it thickens.
  • Remove the pan from the heat and add lemon juice. Stir to mix.
  • Add the scallops back in and garnish with parsley. Serve immediately.
