Puto Recipe

Puto is a classic Filipino delicacy—soft and fluffy, these steamed rice cakes are often eaten on their own or can be served together with other savoury dishes. They’re airy and light, making them perfect for a pre-meal snack or a quick bite. While there are, of course, boxes of premade puto mix available in grocery stores, here’s how you can authentically recreate the puto recipe easily at home.

Ingredients

  • 425g of rice flour
  • 200g of sugar
  • 30g of baking powder
  • ¼ tsp of salt
  • 315ml of water
  • 400ml of coconut milk
  • Non-stick cooking spray

  • 1 bowl
  • 1 whisk
  • Puto moulds
  • 1 steamer
  • Cheesecloth

Puto Recipe

Directions

  • In a bowl, add rice flour, sugar, baking powder, and salt. Whisk until all components are combined.
  • Add water and coconut milk and mix until the batter is smooth.
  • Using the non-stick cooking spray, lightly spray a thin layer inside the puto moulds.
  • Pour the batter equally into the moulds until it is ¾ full.
  • Pour water into the steamer and bring it to a boil.
  • Arrange the puto moulds into the steamer.
  • Wrap the steamer lid with cheesecloth and cover the steamer.
  • Steam for 15 minutes.
  • Transfer the puto out from the steamer and set it aside to cool.
  • Remove puto from the moulds and serve.

Savoury twist

A classic puto recipe is plain and mildly sweet, but you can always add on toppings to make it savoury instead. A popular variation of the puto is a cheese puto! All you’ll need to add is a thinly sliced cheese on the top of your steamed cakes and let it melt for a minute or two before serving.
