Ingredients
30ml of vegetable oil
900g of pork shoulder, cut into bite-sized chunks
60ml of white vinegar
80ml of low sodium soy sauce
6 cloves of garlic, chopped
1 bay leaf
4g of black peppercorns
8g of sugar
475ml of water

Directions
In a pot, add oil over medium-high heat.
Add the pork and sear until it is browned on all sides.
Add the vinegar, soy sauce, garlic, bay leaf, peppercorns, sugar, and water and bring it to a boil.
Reduce the heat to medium-low, cover with the lid and let it simmer for an hour.
Remove the lid and continue simmering for another 30 minutes until the sauce reduces and thickens to the desired consistency.
Ladle into a bowl or over a bowl of plain steamed rice and serve!
