Try our pares recipe for a simple but fulfilling one-pot meal. Beef pares is a popular Filipino braised beef dish, often eaten with garlic fried rice and a bowl of soup. The dish does not require a unique cooking method, but its tender meat is guaranteed to keep you craving for more.

Ingredients

  • 2 tbsp vegetable oil
  • 2 garlic cloves, crushed
  • 2 tbsp ginger, minced
  • 1 medium onion, minced
  • 1kg beef brisket, cut into cubes
  • 1l water
  • 6ml soy sauce
  • 50g sugar
  • 2 pieces star anise
  • 1 piece beef cube
  • Salt and pepper to taste
  • 1 green onion, sliced

Directions

  • Fry garlic and ginger in a pot. Add the onions and cook until translucent.
  • Add the beef and cook for 5 minutes.
  • Add water, soy sauce, sugar, star anise and beef cube. Boil for 20 minutes on low heat.
  • Season with salt and pepper. Let it simmer until the sauce thickens.
  • Top with sliced green onion.
  • Serve hot.

Authentic Filipino beef broth

  • Boil 3l of water and add 1 chopped onion, 3 chopped garlic cloves and 1kg beef shank. Season with salt and pepper.
  • Boil the broth on low heat for 2 hours. Remove the scum that appears at the top to keep the stock clear.
  • After 2 hours, taste again and add more salt if necessary.
