Similar to the American-style dinner rolls, pandesal is a Filipino breakfast staple. Sweeter than it is savoury, each bite is guaranteed a soft and fluffy centre and a crispy golden-brown exterior. Made of all the ingredients you can find stocked up at home, here’s our take on the pandesal recipe.

Ingredients

  • 555g of all-purpose flour
  • 115g of granulated sugar
  • 2 ¼ tsp of instant yeast
  • 1 ½ tsp of kosher salt
  • 235ml of milk
  • 60ml of vegetable oil
  • 2 large eggs
  • 1 large egg yolk
  • 60g of plain breadcrumbs

  • 1 stand mixer (with the dough hook attachment)
  • 2 bowls
  • Plastic wrap
  • Baking sheet
  • Parchment paper

Pandesal Recipe

Directions

  • In the stand mixer bowl fitted with the dough hook, add in flour, sugar, yeast, and salt.
  • Mix on low speed until combined.
  • Pour in the milk and oil, then add in the eggs and egg yolk. Mix until a rough dough forms.
  • Increase the speed to medium, mix until the dough is smooth and pulls away from the sides of the bowl.
  • Transfer the dough to an oiled bowl and cover with plastic wrap. Set it aside at room temperature until the dough doubles in size—approximately 1 ½ hour.Line the baking sheet with parchment paper.
  • Line the baking sheet with parchment paper.
  • In another bowl, fill it with breadcrumbs.
  • Once the dough is ready, transfer it to a clean and floured surface. Divide into 16 equal portions.
  • Cup the dough beneath your palm and work it in quick circular motions until it forms a smooth ball.
  • Transfer the ball into the bowl of breadcrumbs and coat evenly on all sides. Repeat for the rest.
  • Set the rolls on the baking sheet, with 1-inch spacing between each roll.
  • Cover the baking sheet with plastic wrap and let the dough rise at room temperature for another hour.
  • Preheat the oven to 177°C and bake the pandesal for 20 minutes.
  • Remove from the oven and transfer to a platter to serve.
