Ingredients

  • 230g ice
  • 710ml water
  • 2l water for blanching
  • 10 to 12 snap peas
  • 100g carrot, julienne
  • 1 small cabbage, chopped
  • 3 tbsp cooking oil
  • 1 onion, sliced
  • 1 tsp garlic, minced
  • 115g pork, thinly sliced
  • 1 Chinese sausage, sliced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 355g chicken broth
  • 190g water
  • Salt and pepper to taste
  • 8 to 10 shrimp, shell removed
  • 30g parsley, chopped
  • 250g flour stick noodles

Pancit Canton Recipe

Directions

  • Prepare 230g of ice and 710ml of water in a large bowl. Set aside.
  • Boil 2l of water in a cooking pot. Blanch the snap peas, carrots, and cabbage for 35 to 50 seconds. Remove the vegetables and transfer them to the bowl with the cold water. Drain the water and set the vegetables aside.
  • Heat the cooking oil in the wok. Fry the onions and garlic, add the pork and Chinese sausages. Cook until lightly brown.
  • Pour in the soy sauce, oyster sauce, chicken broth and water. Season with salt and pepper. Boil for 10 minutes.
  • Add in the shrimp, parsley and noodles. Stir until the noodles absorb the liquid.
  • Add the blanched vegetables. Stir again.
  • Transfer to a serving plate and serve hot.
