Palabok Recipe

Palabok is a flavourful and saucy Filipino noodle dish. You can find Palabok at the Philippines’ famous fast-food franchise Jollibee, but why not try making your own with this palabok recipe? Palabok is made with rice noodles cooked in an orange sauce, topped with prawn, hardboiled eggs, fried garlic, and other toppings. You can customise palabok to your preferences as well!

Ingredients

  • 500g of rice noodles

For the sauce:

  • 45ml of oil
  • 3 cloves of garlic, minced
  • 1 onion, chopped
  • 300g of ground pork
  • 45ml of fish sauce
  • 3.6g of annatto powder
  • 1l of water, for the annatto powder
  • 1 shrimp or pork bouillon cube
  • 60g of flour
  • 236ml of water, for the flour
  • 2.3g of ground pepper

For the toppings:

  • 4 hardboiled eggs, sliced
  • 130g of prawn, boiled
  • 120g of smoked fish
  • 230g of pork rind, crushed
  • 25g of spring onions, chopped
  • 2 calamansi, cut into halves

Palabok Recipe

Directions

  • Soak the rice noodles in water for 15 minutes in a large bowl.
  • In the meantime, boil water in a large pot.
  • Once the rice noodles are soaked, move the rice noodles into the pot of boiling water. Boil for 3 to 5 minutes, until it’s cooked but still firm.
  • Once it’s cooked, drain it and transfer it back to the large bowl. Set aside.
  • Pour the oil into the saucepan, heat it over medium heat, then sauté the minced garlic and chopped onion until tender.
  • Next, add the ground pork and fish sauce. Break up the ground pork into small pieces and cook for 5 – 10 minutes.
  • Meanwhile, combine the annatto powder and 1l of water in a large bowl. Stir well and pour this into the saucepan.
  • Next, add your desired bouillon cube to the pan and let it simmer until it begins to boil.
  • Mix the flour and 236ml of water in a small bowl, then pour it into the saucepan. Stir continuously until the sauce thickens.
  • Season it with ground pepper, then turn off the heat.
  • Pour three-quarters of the sauce onto the rice noodles and mix well. Transfer it to a serving dish and pour the remaining sauce on the noodles.
  • Arrange your toppings: hardboiled eggs, boiled prawns, and smoked fish on top and finish them with the crushed pork rinds and chopped spring onions. Serve the calamansi wedges on the side.

Tips and Customisation for Palabok

Remember not to overcook your rice noodles, or they’ll have an overly soft and mushy texture. Also, if you’d like to pack them for a trip or for a friend, try to pack the noodles, sauce, and toppings separately. You can also refrigerate them for up to a week!
