Ingredients
6 ripe Saba bananas, peeled
For the batter:
100g of flour
30g of cornflour
55g of granulated sugar
6g of salt
4g of baking powder
1/2 cup of water or milk
Other ingredients:
Cooking oil for frying
55g of sugar for coating

2 large bowls
1 masher
1 spatula
1 frying pan
1 ladle
1 pair of tongs
Paper towels
Directions
Mash the bananas with a masher in a large bowl until you achieve a chunky consistency. Be careful not to mash it until smooth.
Combine the flour, cornflour, granulated sugar, salt, and baking powder in another large bowl. Then, mix in the water or milk and stir with a spatula until well combined.
Add the mashed bananas and continue to mix until well combined.
Heat the cooking oil over medium heat in a frying pan. Once the oil is hot enough, scoop a ladleful of the banana mixture into the pan and lightly flatten it with the spatula.
Note: Fry 3 to 4 maruyas at a time. Be careful not to overcrowd the pan to prevent it from going soggy.
Fry each side until golden brown and with a pair of tongs, transfer the maruyas onto some paper towels to absorb any excess oil.
Lastly, sprinkle your maruyas with sugar and serve while they’re warm.
Maruya Variations and Toppings
Different parts of the Philippines make Maruya differently. In the north, they mash the bananas and mix them into the batter before frying. In Bicol, they stick banana slices together with the batter and deep-fry it; it’s called Sinapot. In the Visayas region, they slice the banana into a fan-like shape before coating it in batter and deep-frying it; this version is called Pinaypay. Jazz up your maruya with toppings like ice cream or cinnamon powder.
