Ingredients

For Latik

  • 1 can of coconut cream

For Brushing

  • Coconut oil

For Maja Blanca

  • 2 cans of coconut milk
  • 1 can of evaporated milk
  • 1 can of condensed milk
  • 150g of sugar
  • 1 can of sweet kernel corn
  • 128g of corn flour
  • 118ml of water

  • 1 13x9 baking dish
  • 1 large pot
  • 1 small bowl
  • 1 whisk
  • 1 spatula

Directions

For Latik

  • Pour the coconut cream into a large pan and bring it to a boil over medium heat. Stir occasionally until it starts to thicken.
  • Reduce the heat to low and let it simmer.
  • Once the coconut cream starts to separate into oil and solids, stir it regularly and scrape the sides and bottom of the pan to prevent burning.
  • Continue to stir until the curds are golden brown.
  • Then, drain the latik with your sieve and set it aside.

Maja Blanca

  • With the pastry brush, brush the sides of the 13x9 baking dish with coconut oil then, set aside.
  • Pour coconut milk, evaporated milk, condensed milk, and sugar into the large pot.
  • Bring it to a gentle boil over medium heat.
  • Stir occasionally until sugar dissolves.
  • Add the corn and continue cooking for 2-3 minutes.
  • Next, mix water and corn flour in a small bowl. Mix well until the corn flour dissolves.
  • Then, gently pour the corn flour mixture into the milk mixture while whisking vigorously to prevent lumps.
  • Keep whisking until the mixture thickens and turns into a paste.
  • Then, pour it into the 13x9 baking dish. Smooth the top with an oiled spatula and let it cool.
  • Next, cover and refrigerate it for 1-2 hours or until it is cooled and set.
  • Lastly, brush the top with coconut oil and top it with latik. To serve, cut it into squares.

For a More Flavourful Maja Blanca

Instead of water, you can use the canned corn kernel liquid to dissolve the corn flour. However, remember to pour the liquid slowly to make it easier to stir. Don’t worry if you’re too busy to make latik. You can always replace it with toasted grated coconut or even shredded cheese! Other alternatives to consider for maja blanca are replacing canned sweet kernel corn with fresh sweet corn.
