Our lugaw recipe consists of two main ingredients - rice and chicken stock. Simmered with ginger and chicken, Lugaw is a warm and creamy dish, perfect if you're craving a homemade meal. Ingredients

  • 220g white rice
  • 2l cold water
  • 30ml concentrated chicken base
  • ½ tsp kosher salt
  • 300g boneless and skinless chicken breast, thinly sliced
  • 1 tbsp ginger, minced
  • 2 tbsp olive oil
  • 3 garlic cloves, thinly sliced
  • 1 scallion, thinly sliced
  • 2 to 3 round lemon slices, halved

Lugaw Recipe

Directions

  • In a large pot, combine rice with water, concentrated chicken base, and salt. Bring to a boil and stir for 10 minutes. Reduce the heat and cook for 20 minutes more.
  • Add the chicken and ginger, increase the heat to medium and stir until the chicken is cooked.
  • Heat the olive oil in a small skillet. Add the garlic slices and fry until light golden brown. Remove and set aside.
  • Transfer the Lugaw into the serving bowls. Garnish with fried garlic chips, sliced scallions and a lemon slice.
