Liempo is a staple in Filipino cuisine—it’s served both regularly and during celebrations and festivities. Liempo is simple, but the blend of spices packs each bite with so much flavour and goodness that you’re guaranteed to return for seconds. In an authentic liempo recipe, it’s recommended to grill it over charcoal, but here’s a more home-friendly version instead.

Ingredients
3 tbsp of soy sauce
1 ½ tbsp of distilled white vinegar
4 cloves of garlic, minced
¾ tsp of garlic powder
2 ½ tbsp of brown sugar
½ tbsp of vegetable oil
¾ tsp of black pepper
1 bay leaf
½ tsp of dried oregano
500g of pork belly, sliced
1 red onion, diced
1 tomato, diced
¼ tsp of salt
1 tsp of cooking oil

1 skillet
Directions
Combine soy sauce, distilled white vinegar, minced garlic, garlic powder, brown sugar, vegetable oil, ½ teaspoon of black pepper, bay leaf, and dried oregano in a bowl. Mix until well combined.
Add the pork belly slices into the bowl and mix to coat thoroughly. Set aside to marinate for at least 30 minutes.
In another bowl, combine the diced red onion and tomato, and season with ¼ teaspoon of pepper and salt. Mix, and set aside.
In a skillet over high heat, add cooking oil.
Add the marinated pork belly slices onto the hot skillet and cook until there’s a charred layer. Flip and repeat.
Transfer the liempo to a serving platter and plate with the tomato-onion salad.
Serve immediately.
Overnight Marinating
For the best results with this liempo recipe, extending the marinating time is recommended to allow the flavours to infuse further and intensify. While this recipe calls for only 30 minutes, it’s best to leave it in the fridge overnight.
