Ingredients

  • 15ml canola oil
  • 1 large onion, peeled and thinly sliced
  • 1 head garlic, peeled and minced
  • 177ml vinegar
  • 473ml water
  • 473ml Lechon sauce, homemade or store-bought
  • 165g brown sugar
  • 1.36kg roasted pork, chopped into 1-inch pieces
  • 3 bay leaves
  • 40g liver spread
  • Salt to taste
  • Pepper to taste

Directions

  • Heat oil and fry the onions and garlic over medium heat until softened.
  • Add the vinegar and water. Boil with the pot uncovered for 5 minutes and do not stir.
  • Add the Lechon sauce and sugar and stir to combine.
  • Add the pork and bay leaves.
  • Lower the heat, and continue to cook until the meat is tender. Add more water if needed.
  • Add the liver spread and stir the mixture well.
  • Season with salt and pepper to taste.
  • Continue to boil until the sauce is slightly thickened.
  • Serve hot.
