Make a hearty bowl of beef kaldereta with our kaldereta recipe! Kaldereta is a Filipino stew where beef is simmered in spicy and tangy tomato sauce with chunks of pepper, potatoes, and green olives. Like other Filipino dishes, kaldereta was also influenced by the Spanish. This stew was traditionally made with goat meat; however, cooks gradually started using more accessible meat like beef.

Ingredients
60ml of canola oil
2 large carrots, peeled and cut into 5cm wide cubes
2 large potatoes, peeled and cut into 5cm wide cubes
1 onion, roughly chopped
4 cloves of garlic, minced
910g of bottom round roast, cut into 5cm wide cubes
500g of tomato sauce
30ml of tomato paste
470ml of water
10 Thai chilli peppers, minced
Salt to taste
Pepper to taste
170g of liver spread
55g of cheddar cheese, shredded
1 green bell pepper, seeds, and core removed, cut into cubes
1 red bell pepper, seeds, and core removed, cut into cubes
70g of green olives, pitted

1 large pan with a lid

Directions
Heat the oil in a large pan over medium heat. Add the carrots and potatoes and pan-fry until lightly browned. Transfer them onto a layer of paper towels to drain excess oil.
Remove half of the oil from the pan, add the chopped onions and minced garlic and cook until softened.
Add the beef, cook, and stir until lightly browned.
Add the tomato sauce, tomato paste, water, and minced chilli peppers. Bring the mixture to a boil and remove any scum that appears on the surface.
Season with salt and pepper to taste and stir well.
Lower the heat and simmer the stew for 1 hour with the lid on.
Add the pan-fried potatoes and carrots and cook until tender.
Add the liver spread and shredded cheese. Stir until everything is well combined, and continue cooking until the sauce thickens.
Lastly, add the bell peppers and olives and cook for 1 to 2 minutes.
Pointers for Kaldereta
Firstly, lightly pan-fry the carrots and potatoes to help maintain their shape and prevent them from falling apart while simmering. Moreover, defrost your meat of choice until partially firm to allow easier cutting. Remember to trim away any gristle. Furthermore, if you’d like to reduce the spice level, remove the chilli pepper seeds before mincing the peppers.
