Gulay is a stir-fried saucy vegetable dish consisting of various vegetables such as string beans, eggplants, green peas, and even sweet kernel corn. Ingredients

  • 6 string beans
  • 44ml of cooking oil
  • 4 cloves of garlic, crushed
  • 1 red onion, chopped
  • 473ml of coconut milk
  • 8 okras
  • 1 eggplant, sliced
  • 1 red bell pepper, cubed
  • 24g of shrimp paste
  • Ground black pepper to taste

For Garnish

  • 1 red chilli, minced

Directions

  • Cut the string beans into 2-inch pieces, then set aside.
  • Pour the oil into your wok and heat it over medium heat.
  • Then, add the garlic and onion. Cook until the onions soften.
  • Next, add the string beans and continue cooking for 3 minutes.
  • Pour the coconut milk into the wok and let it come to a boil.
  • Cover the wok and let it simmer for 10 minutes.
  • Add the okra and the eggplant.
  • Stir and continue cooking for eight minutes, then add the red bell pepper.
  • Add in the shrimp paste and ground black pepper while stirring then, continue cooking for 5 minutes.
  • Lastly, garnish with the red chilli.

This gulay recipe may only have vegetables, but feel free to add some protein! You can add in pork or prawns. If you choose to add pork, remember to slice it thinly; then, cook it in water. Next, you’d want to keep the water as it’s now pork stock. Then, add it in as you pour in the coconut milk.
