Mango Graham is a popular Filipino dessert often made for special occasions or holiday celebrations. This Mango Graham recipe is simple and easy to follow. It is essentially a no-bake dessert made with only four ingredients! It’s also known as mango float or mango royale in the Philippines. Ingredients

  • 250ml of all-purpose cream
  • 1 big ripe mango
  • 1/2 can of sweetened condensed milk
  • 1 packet of Graham crackers

  • 1 hand mixer
  • 1 8x8 or 6x6 glass dish

Directions

  • Keep the all-purpose cream in the fridge overnight or the freezer for half an hour.
  • When the cream is ready, peel the mango and cut the flesh from its pit into thin slices. Set aside.
  • Next, pour the chilled all-purpose cream into a large bowl, and whip it with a hand mixer. Continue whipping until it doubles in volume.
  • Then, slowly fold in the sweetened condensed milk until it’s well blended.
  • Line your glass dish with a layer of Graham crackers, spread one-quarter of the cream mixture on the crackers, and top it with the mango slices.
  • Repeat this process 4 times, and the top layer should be covered with mango slices.
  • Lastly, chill for 3 to 5 hours or until the crackers are softened. At this point, you can freeze it for at least two hours before serving. It’ll be easier to cut into and plate.

Tricks to Make a Better Mango Graham

To make the perfect Mango Graham, you’d need your cream to be voluminous and fluffy. To do that, you need to chill your cream, large bowl and hand mixer. Chill your equipment in the freezer for around 15 minutes. Cream whips better when it’s cold because fat globules emulsify faster and stay emulsified for longer. The chilled equipment then helps to maintain the coldness. You need to give the crackers enough time to absorb enough moisture from the cream so that it can soften. So, don’t chill your Mango Graham in the freezer right after assembling it.
