A call for all the adventurous eaters out there, here’s the unconventional but delicious Filipino blood stew, dinuguan. Often referred to as ‘chocolate meat’, this combination of pork sautéed in onion and garlic with pork blood is hearty and boldly flavoured. You can serve this dinuguan recipe over steamed rice or with puto, both making a tasty and filling meal.

Ingredients
3 tbsp of cooking oil
1 onion, chopped
4 cloves of garlic, minced
455g of pork, cubed
250ml of water
1 cube of pork bouillon
285g of pork blood
250ml of vinegar
1 ½ tbsp of brown sugar
2 pieces of long green pepper
½ tsp of salt
½ tsp of pepper

1 pan
Directions
In a pan over medium heat, add oil.
Toss in the onion and garlic and sauté until fragrant.
Add pork and sauté for 5 minutes until it lightly browns.
Pour water and bring it to a boil.
Turn the heat down to low, add the pork bouillon and cook until the meat is tender.
Add pork blood and cook for 10 minutes, stirring constantly.
Pour in the vinegar, add brown sugar and the long green pepper. Cook for another 15 minutes.
Season with salt and pepper.
Ladle into a bowl and serve!
