Ingredients
500g pork
1 tbsp peppercorn
3 bay leaves
500g pig ears, snout, or skin, cut into bite-sized pieces
600g garlic, minced
600g onion, minced
60ml lemon juice
115g pig brain, boiled and mashed
3–4 bird's eye chillies, finely chopped
Ground pepper to taste

Directions
Boil the pork in water with peppercorn and bay leaves until tender. Set aside.
In a frying pan, fry the pig ears, snout or skin until tender but not crispy. Mix with the boiled pork.
Add the garlic, onion, lemon juice, and mashed brain to the pork mixture.
Add the chillies to the bowl according to your preference.
Season with pepper and mix all the ingredients.
