Ingredients

  • 2 ¼ tsp of salt, divided
  • 455g of boneless chicken breast
  • 455g of elbow macaroni
  • 1 can of pineapple chunks, drained
  • 1 bottle of pimiento, chopped
  • 1 green bell pepper, chopped
  • 145g of raisins
  • 130g of carrots, chopped
  • 60g of sweet relish
  • 170g of shredded cheddar cheese
  • 335g of mayonnaise
  • ½ tsp of garlic powder
  • ¼ tsp of ground black pepper

Chicken Macaroni Salad Recipe

Directions

  • In a pot, add water and bring to a boil.
  • Add 1 teaspoon of salt and toss in the boneless chicken breast.
  • Turn the heat down to medium and boil the chicken for 22 minutes.
  • Once cooked, remove the chicken from the pot to cool down. Shred the boiled chicken and set it aside.
  • In another pot, add water and bring to a boil.
  • Add 1 teaspoon of salt and toss in the elbow macaroni. Cook for 9 minutes, stirring in between to prevent clumps.
  • Once cooked, drain the water and set it aside.
  • In a large bowl, add the macaroni and shredded chicken and toss.
  • Add in the pineapple, pimiento, green bell pepper, raisins, carrots, sweet relish, cheddar cheese and mix until well combined.
  • Add in mayonnaise and garlic powder, gently tossing to combine all the ingredients.
  • Season with ¼ teaspoon of salt and black pepper.
  • Scoop into a bowl and serve!
