Chicken Inasal Recipe

Make a Filipino-style chicken barbeque dish with our chicken inasal recipe! Chicken inasal is chicken marinated in calamansi juice, vinegar, and spices, basted with a unique orange coloured oil called chicken annatto oil and grilled over a skillet. Inasal is an Ilongo term that translates to ‘char-grilled’ meat, and this particular dish originated from the city of Bacolod.

Ingredients

For the chicken marinade:

  • 50g of brown sugar
  • 34g of salt
  • 250ml of vinegar
  • 118ml of lemon or calamansi juice
  • 1 thumb of fresh ginger, peeled
  • 3 cloves of garlic
  • 2 stalks of lemongrass
  • 3.5g of ground black pepper
  • 1kg of chicken, cut into serving size

For the basting sauce:

  • 45ml of annatto oil
  • 75ml of melted margarine or butter
  • 1.5g of salt
  • 5ml of lemon or calamansi juice

For the chicken annatto oil:

  • 500g of chicken skin with fat
  • 355ml of water
  • 236ml of oil
  • 88g of annatto seeds

Chicken Inasal Recipe

Directions

To make chicken inasal:

  • Dissolve the sugar and salt in vinegar in a small bowl.
  • Combine the vinegar mixture, lemon or calamansi juice, fresh ginger, garlic, lemongrass, and ground black pepper and blend for 2 to 3 minutes.
  • Transfer the chicken into a large ziplock bag and pour in the marinade. Refrigerate the chicken for at least 1 hour or until you’re ready to cook.
  • In another small bowl, combine annatto oil, melted margarine or butter, salt, and lemon or calamansi juice to make the basting sauce.
  • Grill the chicken on a skillet until fully cooked while basting both sides with the chicken annatto oil with a pastry brush.
  • Transfer the grilled chicken to a serving dish and set aside for 3 to 5 minutes.
  • Serve with chicken annatto oil.

To make chicken annatto oil:

  • Boil the chicken skin in water for 15 minutes until the fat is rendered.
  • Add the oil and cook until crispy.
  • Remove the chicken skin, add the annatto seeds, and cook for 1 to 2 minutes.
  • Drain the oil through a strainer and store the chicken annatto oil in a jar.

How to Perfectly Grill Chicken

To achieve a juicy and well-cooked grilled chicken, poke a meat thermometer into the thickest part of the chicken without touching the bone to check the internal temperature. The ideal temperature should be 74ºC. Also, once you place the chicken on the skillet, remember to cover it to simulate an oven-like environment to help regulate the heat. Lastly, remember to let the chicken rest after it’s cooked; this helps redistribute the juices!
