Ingredients

  • 6 tbsp cooking oil, divided
  • 800g potatoes, peeled and cubed
  • 70g carrots, chopped
  • 100g yellow bell peppers, sliced
  • 100g red onions, chopped
  • 3 garlic cloves, chopped
  • 900g chicken drumsticks
  • 400g canned tomato puree
  • 225g canned pineapple chunks, reserve syrup, drained
  • 2 tbsp soy sauce
  • 3 dried bay leaves
  • 70g green peas
  • Salt and pepper to taste

Chicken Afritada Recipe

Directions

  • In a big frying pan, heat 4 tablespoons of oil on medium heat. Add the potatoes, carrots and bell peppers. Fry for 5 minutes, remove the vegetables from the pan and set aside.
  • Heat the remaining oil and fry the onions and garlic until fragrant. Add the chicken and fry until it turns slightly brown.
  • Add the tomato puree, pineapple syrup, soy sauce, and bay leaves. Boil until the chicken is almost tender. Stir occasionally.
  • Add the cooked vegetables and canned pineapples. Cook for 5 minutes.
  • Add the green peas and season with salt and pepper.
  • Serve hot.
