Tender Oxtail and Beef Kare Kare Recipe

Kare Kare Recipe

Kare kare is a local Filipino delicacy served only on special occasions. Rich in flavour, it is essentially a creamy peanut butter oxtail and beef stew, paired with vegetables for a fresh crunch. There are a few different versions of this dish, but we have here is the classic kare kare recipe that will never go wrong.

Ingredients

Braised oxtail and beef:

  • 2 tbsp of vegetable oil
  • 450g of oxtail
  • 450g of beef shank
  • 1 yellow onion, chopped
  • 5 tbsp of garlic, minced
  • 475ml of water
  • 1 tbsp of salt

Kare kare:

  • 60g of peanuts, unsalted and dry
  • 45g of uncooked white rice
  • 2 Japanese eggplants, cut into 1-inch pieces
  • 1 banana heart, peeled and cut into 1-inch pieces
  • 5 string beans, cut into 4-inch pieces
  • 2 heads of bok choy, peeled and cut into 2-inch pieces
  • 1 tbsp of vegetable oil
  • 1 ½ yellow onion, chopped
  • 5 cloves of garlic, minced
  • 1 tbsp of annatto powder
  • 70g of smooth peanut butter
  • 1 tbsp of fish sauce
  • 1 ¾ tsp of salt
  • ½ tsp of black pepper

  • 3 large pots
  • 1 spatula
  • 1 blender
  • 1 pan

Kare Kare Recipe

Directions

  • In a pot, heat the oil over medium-high heat.
  • Add in the oxtail and beef shank, searing them on each side for a minute until they have a nice brown crust. Set aside.
  • In the same pot, add in the chopped onions and sauté until slightly translucent.
  • Add the garlic and sauté until fragrant.
  • Add water into the pot, the meat, and salt and bring it to a boil.
  • Turn the heat down to medium-low, cover with the lid, and let it simmer and braise for 3 hours.
  • In a blender, add peanuts and blend until it reaches a fine powder consistency.
  • In a pan over medium heat, add the rice and toast until lightly brown on the edges.
  • In a clean blender, add the rice and blend until powdery.
  • In another pot, add water and bring it to a boil.
  • Throw in the eggplants, banana hearts, string beans and bok choy and blanch until slightly tender. Transfer it to an ice bath after.
  • In a separate pot, add the oil over medium heat.
  • Add in chopped onions and garlic and sauté.
  • Add in only the braising liquid, annatto powder and peanut butter. Stir until combined.
  • Add the ground peanut powder, toasted rice powder and fish sauce and mix until all the ingredients are combined.
  • Transfer the braised meat into the pot and season with salt and pepper.
  • Turn the heat down to low and simmer for 15 minutes to let the sauce thicken.
  • Add in the blanched vegetables and cook for another 3 minutes while stirring.
  • Ladle into a bowl and serve.
