Ingredients
3 medium milkfish
475ml white vinegar
2 garlic cloves, sliced
2 onions, sliced
2 teaspoons salt
1/4 tsp pepper
60ml olive oil

Directions
Remove the fins and tail of the milkfish with a sharp knife. Split it in half, starting from the tail to the head, running the knife along its belly. Remove the gills and innards and wash to remove blood. Place the fish with the skin side down and remove the backbone.
Mix the vinegar, garlic, onion, salt and pepper in a large bowl.
Soak the fish in the marinade and set it aside for an hour.
Heat olive oil and fry the fish with the skin on the bottom for about 10 minutes.
Flip the fish and cook the opposite side for another 10 minutes.

Preheat the oven to 200℃. Place aluminium foil on the oven tray and rub oil on it.
Mix 100g chopped tomatoes and onions, 1 teaspoon grated ginger and 60ml soy sauce in a large bowl. Spread the mixture on the fish.
Put the milkfish on the tray and bake for 40 minutes.
