Ingredients

  • 120ml plus 3 tbsp canola oil
  • 12 garlic cloves, minced
  • 600g boneless chicken thighs, cut into bite-sized pieces
  • 1 medium onion, thinly sliced
  • 1 tbsp ginger, minced
  • 1 tbsp fish sauce
  • 1 tsp black pepper and more to taste
  • 210g uncooked jasmine rice
  • 1.4l homemade chicken stock or low-sodium broth
  • 1 tbsp lime juice
  • Salt
  • 4 scallions, sliced
  • 2 hard-boiled eggs, sliced

Arroz Caldo Recipe

Directions

  • Heat 120ml oil and fry two-thirds of the garlic over medium heat. Stir until garlic turns light golden brown. Remove the garlic from the oil and spread it out on a paper towel-lined plate. Set aside.
  • In the soup pot, heat the remaining 3 tablespoons of canola oil and add the chicken. Cook for 6 minutes or until brown. Add onion and fry for 3 minutes. Stir in ginger and remaining garlic and fry till they turn brown. Pour in fish sauce and pepper and cook for 1 minute. Add rice and mix everything.
  • Pour in chicken stock and boil for 30 minutes. Add lime juice and season with salt and pepper to taste.
  • Serve the Arroz Caldo in bowls. Garnish with scallions and egg slices.
